Couverture vs compound:
what the fat decides.
Couverture is chocolate with a higher minimum cocoa butter content. Compound coating replaces cocoa butter with other vegetable fats. That single substitution changes the name, the handling and the result.

Know this first.
Couverture is a legally defined chocolate with a raised minimum cocoa butter content — in the EU, not less than 35 per cent total dry cocoa solids including not less than 31 per cent cocoa butter — which is what gives it the fluidity professionals need for enrobing and moulding. Compound coating is a different product: it replaces cocoa butter with other vegetable fats, which means it does not require tempering, sets hard without polymorph control, and in most jurisdictions cannot be sold as chocolate.
What couverture actually is
Couverture is a reserved name in compositional standards. Under EU Directive 2000/36/EC, ordinary chocolate must contain not less than 35 per cent total dry cocoa solids, including not less than 18 per cent cocoa butter and not less than 14 per cent dry non-fat cocoa solids. Couverture chocolate must also reach 35 per cent total dry cocoa solids, but with not less than 31 per cent cocoa butter and not less than 2.5 per cent dry non-fat cocoa solids.
The point of that higher fat floor is flow. More cocoa butter means a lower viscosity when melted, which means a thinner and more even coating, cleaner moulding, better release from a mould and a crisper snap. Couverture is therefore a specification aimed at a working property, not a quality medal. It says the chocolate will behave a particular way under a chocolatier's hands; it does not say the beans were good.

What compound coating is
Compound coating replaces some or all of the cocoa butter with another vegetable fat, commonly a lauric fat such as fractionated palm kernel oil, alongside cocoa powder for flavour and colour. Because the fat is no longer cocoa butter, the material does not have cocoa butter's awkward polymorphism, and that is precisely the point: it can be melted and set without tempering and will still be glossy and stable.
This is a genuine engineering trade rather than a cheat. Compound is cheaper, far more tolerant of clumsy handling, more heat-stable in warm climates and entirely appropriate for a school cake-decorating session or a mass-produced biscuit coating. What it cannot do is deliver cocoa butter's melt: the sensation of a coating that yields at body temperature and releases aroma as it goes. Lauric fats melt over a different range and read as waxy by comparison.

The naming rules, and the 5 per cent exception
In most jurisdictions a product whose fat is not cocoa butter cannot be called chocolate, which is why compound is sold as coating, confectionery coating, or under a brand term. Names vary by market, and the reliable move is to read the legal name printed near the weight rather than the marketing name on the front.
There is a middle case. EU rules permit the addition of certain vegetable fats other than cocoa butter up to 5 per cent of the finished product, without dropping the chocolate name, provided the label carries a conspicuous statement that the product contains vegetable fats in addition to cocoa butter. So a bar can legally be chocolate and still contain some non-cocoa fat. That statement is small, mandatory, and worth finding.

Choosing between them
If you are moulding shells, enrobing, making bonbons or want a proper snap and melt, couverture is the correct material and tempering is the price of entry. If you are coating a large tray of biscuits with children, working in a hot kitchen without temperature control, or need something that sets reliably in twenty minutes, compound is not a compromise but the right tool.
The mistake is buying couverture and treating it as compound. Untempered couverture sets soft, dull and streaky and blooms quickly, which produces a worse result than compound would have. The fat that gives couverture its virtues is the same fat that demands the technique.
